Olive Oil
Gar'lick Butta..

Cut Potatoes up in bite size pieces, drizzle with olive oil,  generouly sprinkle with Gar'lick Butta and put in 400 degree oven to roast until done... OHHH DAT GOOD!

C'est Fou Blackened Fish with Crab Sauce

This is an incredibly easy to make Sauce to go over fish. And except for the cream and butter it's a pretty heart healthy.
Ingredients:
8 oz Lump Crab Meat 
1 1/2 Cups heavy cream 
4 Tbs Butter 
1 Tsp of Brown Mustard 
1/8 Tsp Kosher Salt
1/4 tsp C’est Fou Cajun Seasoning
1/4 tsp C'est Fou Garlic Butta
1/2 Tsp Paprika 
1/4 Tsp White Pepper
12 oz Creole Mix( diced onions, green pepper, celery) 

Melt Butter, and sautee the creole mix under tender and onions are translucent.... add seaonings and mustard, to the mixture, simmer a few min.. add crab meat - add heavy cream to the entire mixture.. and reduce heat... mixture should thicken. Serve fish over a bed of rice and spoon on the sauce over the  fish

Fresh Red Snapper or other fresh fish (tilapia, sea bass, catfish, etc.) 

1 Tbsp unsalted butter

C'est Fou Garlic Butta

Be sure to remove skin of fish--- Dip Fish in MELTED BUTTER... and sprinkle generously with C'est Fou Garlic Butta on both sides of fish. Heat Black Cast Iron Skillet - and put Fish in the pan.. ( this will SMOKE quite a bit - so make sure you do this outside.. Blacken each side of fish and put on top of bed of rice. when done... Cover with Crab Sauce...

Recently we were camping and needed some guacamole for our Steak Burrito's.  This is what we did to make the Guacamole taste "like homemade":

1 Pint Guacamole (in refrigerator section)
1/4 to 1/2 Tsp. Ces't fou garlick butta
1 Tomato, diced
2-3 Tblsp. chopped Cilantro
2 Green Onions, chopped fine
1/2 Lemon or Lime Juice

I mixed it all up, placed a dollup on the steak burrito's, and everybody we camped with loved it.

We also needed to flavor-up the Steak Ranchera we purchased at the Carniceria.  This meat is already marinated, but my husband added more goodies:

4 Lbs. Steak Ranchera
Add liberal amounts of both C'est fou Garlick butta & Cajun Seasoning to the bag of steak
Slice one orange thin, then squeeze the orange juice into the bag of steak, adding the sliced oranges.
Marinate it overnight, and cook on the Grill quickly.

Place strips of steak, guacamole, & salsa in a warm flour burrito shell, and ENJOY!

We have to say that both C'est fou gar'lick butta and Cajun seasoning are our "go-to" seasonings for all our meats, pork, chicken, and fish.  Our spice cabinet feels abandoned now that we've found C'es fou...
